Guacamole -- adding that special touch to your Mexican dishes!
Rich, creamy, omega-3-rich avocados, with a touch of lime, a bit of spice, and finely minced tomatoes! It's difficult to describe how these flavors all come together to yield such a delicious taste! If you are new to avocados, give them a try. You'll wonder why you waited so long to add them to your menu!
Guacamole added to your Chicken Fajitas and paired together with Fresh Salsa will give you a truly authentic Mexican food experience!
When choosing your ingredients, use home-grown, grass-fed and organic ingredients whenever possible.
2 ripe avocados
2 tsp freshly squeezed lime juice (or use lemon in a pinch)
1/4 tsp garlic, freshly pressed
1/8 tsp pink Himalayan salt (or to taste)
1 TBSP onion (yellow or red, or thinly sliced green)
A small piece of fresh jalapeno, deseeded and finely chopped (or a pinch of dehydrated hot peppers)
3 TBSP finely diced Roma (deseeded) or grape tomatoes
Cut avocado in half length-wise, remove pit scoop out into a quart bowl; mash avocado. Add other ingredients, stirring to combine. (Or combine all ingredients except tomato into the Manual Food Processor and process (pump) to desired consistency.)
Add the finely diced tomatoes at the very end and incorporate. Taste test and adjust salt and lime/lemon juice.
Delicious with chips or fresh veggies, or to top tacos, enchiladas or you favorite Mexican dish!
Yield: Makes approximately 1 1/2 cups.
