Homemade ice cream....any time of year, but especially in the summer.

 

There is nothing like homemade ice cream. Using wholesome ingredients, you can make it fresh, delicious -- and without all the chemicals and additives of store-bought ice cream. Let's do a little comparison.

My recipe contains:

  • Organic heavy whipping cream

  • Fresh pastured eggs (or whole milk)

  • Organic evaporated cane juice (and not a lot!)

  • Real vanilla extract

  • Organic berries (soon coming right from my garden!)

 

That's it!

One popular brand lists these ingredients for their berry ice cream:

Milkfat and nonfat milk, sweet cream buttermilk, strawberries (strawberries, sugar, guar gum, corn starch-modified, citric acid), high fructose corn syrup, corn syrup, strawberry puree (strawberries, sugar), whey, contains less than 2% of natural flavor, maltodextrin, mono & diglycerides, tapioca starch, guar gum, carob bean gum, red 40, blue 1, carrageenan, sucralose.

Here is another:

Milk, Skim Milk, Cream, Sugar, Strawberries, Strawberry Swirl (Strawberries, Sugar, Water, Natural Flavors, Pectin, Citric Acid, Phosphoric Acid, Malic Acid, Calcium Chloride, Strawberry Juice Concentrate, Cherry Juice Concentrate, Blue 1, Red 40), Corn Syrup, Contains 1% or less of Natural Strawberry Flavor, Carob Bean Gum, Guar Gum, Carrageenan, Mono & Diglycerides, Cellulose Gel, Cellulose Gum, Strawberry Juice Concentrate, Citric Acid, Cherry Juice Concentrate.

 

Obviously, when ice cream is made long before it is consumed -- hauled on a truck over long distances to the local grocery store, waiting for someone to purchase and take it home to their freezer -- the ice cream is going to require all kinds of additives and stabilizers to ensure a "quality" product. What we mean by "quality" is in terms of texture. But, oh, the price we pay, with ingredients that are not recognizable by our bodies as "real food." These pseudo ingredients tax our bodies, rather than feed and nourish our cells. How much better to invest in an ice cream maker (recommendations at the end of this page) and make your ice cream, fresh and delicious!

When choosing your ingredients, use home-grown, grass-fed and organic ingredients whenever possible.

Ingredients:

1 ½ cups heavy whipping cream

2 eggs, fresh, free range, pastured (or pasteurized)*

½ cup organic evaporated cane juice

1 tsp vanilla

2 heaping cups frozen berries (I used organic strawberries, raspberries & blueberries)

 

*If you do not want to use eggs, substitute with ½ cup whole milk.

 

 

Directions:

  1. Put all ingredients into a blender* and puree until smooth.

  2. Turn on the Ice Cream Maker and pour mixture through the funnel. Do not pour mixture into the bowl if it is not turned “on” and the paddle churning, as the mixture will instantly freeze to the sides of the frozen bowl.

  3. Churn for 12-20 minutes.

  4. Ready to serve!

 

*The blender needs to have a good strong, motor, such as the Bosch Blender (800 watts).

 

 

Alternate Method:

If you would like berry pieces in your ice cream, chop the berries coarsely and keep in the freezer, while you churn the rest of the ingredients (be sure to chill in the freezer 20-30 minutes before churning). When the mixture has churned and is almost doubled, add the partially frozen berries in through the pour spout and allow to churn another minute or two, or until berries are incorporated.

 

 

Serving Yield:

This recipe makes a little over 1 quart and serves 6 people, or a la mode (with pie or cake), up to 8 servings.
